Pina Colada Cupcakes


I made these lovelies to take to work on Friday. Actually, CB made the cupcakes and I made the frosting. They were super yummy, but the frosting was a pain to work with. I hate working with cream cheese frosting, it always turns out runny. Any one have a good recipe for a stiff cream cheese frosting that pipes well?

Yummy! How do you make all these gorgeous cupcakes and still lose weight? You are amazing! My cream cheese frosting is runny, too. Perfect for homemade Oreos!

Hi! Deb Hardy sent me over - she says we have a lot in common. (I wish! My cupcakes are never as gorgeous as those ones up there!)

Hrm...my cream cheese frosting is never runny. ?? I use one stick of butter, one block of cream cheese, and about a pound of powdered sugar (or more, until it holds a stiff peak). (http://chowreview.blogspot.com/2010/09/birthday-carrot-cake.html - obviously, that frosting was a little runny, but I wanted it to ooze a bit. Hope that helps!)
