This past week I've had this weird stomach thing and haven't had a real desire to eat anything. Poor Brock has been eating cereal for a week because there was no point in making dinner if he was the only one going to eat. Although I still don't have much desire to eat, I made dinner tonight. I looked in my cupboard and saw all those cans of beans and an idea struck! I remembered when I was a kid my mom would make this AMAZING taco soup. It was so yummy but completely unhealthy. Being the health freak I am, I tweaked it up a bit. Here is the recipe:
Taco Soup
Ingredients:
1 pound ground turkey breast
1 pack of taco seasoning
1 pack of dry ranch dressing mix
1 onion, chopped
cooking spray
2 cans of diced tomatoes (undrained)
1 can of Rotel tomatoes (undrained)
1 can of black beans (drained)
1 can of corn (drained)
1 can of pinto beans (drained)
Directions:
Spray a large pot with cooking spray. Saute onions with meat, cook until browned and no longer pink. Add the taco seasoning and the dry ranch mix. Add the beans, corn, and tomatoes. Cook until completely warm. Makes 8 servings
You can serve the soup like this or top tortilla chips with the taco soup along with sour cream and some grated cheddar cheese. If you are on weight watchers, this is 4 points per serving.

Recently I had some really yummy Taco Soup. We put fresh Spinach in the bowls and poured the soup over it. It's super yummy like that and adds even more vegies!
